Vegan Chocolate Chip Muffins 
My friend, Stephanie sent me a recipe for Vegan/Organic Chocolate Banana Muffins. This recipe was given to her by Cassie, the proprietor of the Pomegranate Cafe in Phoenix, AZ. If you are ever in Phoenix, be sure to stop in and say hello!
I made these today and can I just say, these are the BEST muffins I have ever eaten in my life! My kids said the same thing as well as a dear friend who stopped by today. This recipe uses maple syrup, and coconut oil to create the moistest, most decadent banana muffin you will ever eat!

Vegan Banana Chocolate Chip Muffins



  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Prepare 12 cup muffin tray with papers or a light coating of coconut oil.
  3. Whisk together the flour, baking powder, baking soda, sea salt, and cinnamon in a large bowl.
  4. Add mashed banana, syrup, and oil.
  5. Stir just until all flour is absorbed.
  6. Fold in the chocolate chips (and nuts if using).
  7. Portion the batter into muffin cups and bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  8. Makes 12 muffins.
You’re going to want to make a double batch of these because they don’t last!
