The end of summer is always bittersweet for me. While I love the fall and everything that goes with it, I really love summer and fresh, local, in-season fruits and vegetables even more!
I enjoy making foods that celebrate summer’s bounty. Tomatoes and eggplant are still plentiful right now. My favorite way to eat eggplant and tomatoes is by roasting them with lots of garlic and parmesan cheese! It’s such a delicious dish that even the kids will eat it!
