Peaches ‘n Cream Overnight French Toast

 There something so elegant about peaches and cream together! Peach season is ending here on the east coast so peach dishes abound! It’s a last ditch effort to hang on to my summer! 

I love making breakfast while I am making dinner! I can get two things done at once and at least seem like I am productive, if only for a few moments! It’s easy to to put this dish together and store it in the refrigerator until you are ready for it in the morning. Peaches ‘n cream overnight french toast is similar to my overnight blueberry french toast bake ingredient-wise but with a few additions that give it a distinct spiced peach flavor. 

If you are gluten or grain free, replace the bread with your favorite gluten-free bread or substitute with coconut flour muffins (or try this recipe). Need it to be dairy-free? Replace the milk and cream with coconut milk and coconut cream. The cream cheese can be coconut cream cheese or just leave it out. Replace the butter with coconut oil

You can also used preserved peaches if fresh are no longer in season. It won’t be exactly the same but it’ll be a taste of summer during the cold, winter months. Learn how to preserve peaches here.

Peaches 'n Cream Overnight French Toast

Ingredients
  1. 1 LB bread or muffins of choice
  2. 4-6 peaches depending on size
  3. 2 cups whole milk - preferably raw (or coconut milk)
  4. 1/2 cup cream (or coconut cream)
  5. 8 pastured eggs
  6. 8 oz cream cheese (or coconut cream cheese)
  7. 1/4 cup pastured butter or coconut oil
  8. 2-3 tsp cinnamon
  9. Pinch of sea salt
  10. 2 tsp vanilla extract
  11. 1/2 cup maple syrup (preferably grade B)
  12. Pinch of cardamon (optional)
Instructions
  1. Grease a 13x9" baking dish with butter or coconut oil.
  2. Tear bread or break muffins into pieces and place in dish.
  3. Cut peaches into slices and lay on top of bread.
  4. Cut cream cheese or scoop into bite-sized pieces and place all over peaches.
  5. Mix milk, cream, vanilla, eggs, maple syrup, butter, salt, and spices in a large bowl and pour over peach and bread mixture.
  6. Cover tightly and place in refrigerator overnight.
  7. The next morning, preheat oven to 350 degrees Fahrenheit.
  8. Bake covered for 30 minutes and another 30 uncovered, or until golden brown and bubbly.
  9. Serve with additional maple syrup if needed.
Notes
  1. Be sure to either place the french toast in the oven while it is preheating or let sit at room temperature for about 30 minutes prior to baking to avoid dish breakage.
