Welcome to this week’s all new grain-free meal plan!

I was so wrapped up in working on coursework for my Masters Degree that I almost forgot to get this week’s meal plan written! It’s true, I am adding to my already extensive nutrition and herbal education with a Masters of Science in Applied Clinical Nutrition from New York Chiropractic College. It’s a 2-year program that will allow me to take State and National exams to obtain licensure in my field of nutrition. 

I live in New Jersey which does not require licensure to practice nutrition. Why am I spending so much time and money getting more degrees and licensure? Because laws can change and I don’t want to ever not be allowed get sick people well if legislation mandates something more from me. The more I learn, the better practitioner I am. 

Last week I taught a grain-free cooking class which covered the basics of grain-free cooking. With a few simple recipes, you can make a variety of grain-free staples that will help you transition to life without grains. I featured the book Without Grain by Hayley Ryczek from Health Starts in the Kitchen. I also demonstrated a pierogi recipe made with cassava flour from Predominantly Paleo (check out Jennifer Robin’s book Down South Paleo), along with my Grain-Free Sandwich Wraps. It was a fun and informative night!

Saturday is my birthday, (I am so excited, I get a kitten and a kitchen island!) so I’ve included some delicious paleo cakes to add to your recipe boxes!
