Growing up in New Jersey, cucumbers and tomatoes were plentiful in my Dad’s garden.
I remember eating cucumbers with lemon juice and salt, and tomato salad with lots of garlic as a kid. Brings back really good memories of summer, fresh food, and family!
My Great-Grandmother made the most amazing tomato salad! We would sop it up with good Italian bread and have garlic breath for days! Good times!
My cucumber tomato salad with basil is very simple but has a lot of flavor. It’s nothing that hasn’t been done before but it’s a staple in my family. It makes the perfect summer picnic dish and is great for BBQ’s.
I think what I love most about this salad, besides the flavor is the vibrant color. In season vegetables are so bright and colorful. You know they are good for your body and they make “eating the rainbow” a whole lot easier. Tomatoes in winter from the grocery store just don’t have the same appeal. They are so lack luster.
It’s so much better to eat your vegetable and fruits in season.
- 4 peeled cucumbers (chopped/cubed)
- 4 ripe tomatoes (chopped/cubed)
- 1-2 cloves garlic (crushed)
- handful of fresh basil (chopped or shredded)
- Apple cider vinegar
- Olive oil
- Sea salt, pepper to taste
- Place chopped cucumbers, tomatoes, basil and garlic in a bowl.
- Toss with a few splashes of oil and vinegar.
- Season with salt and pepper.
- Check for flavor and adjust as needed.
Other fresh herbs can be added for even more flavor like oregano, tarragon, or parsley. Whatever your preference or what you have on hand will work.
Just one bite takes me back to summers gone by. So fresh. So flavorful!
