I cook with my kids…a lot! We brainstorm new recipes together and when we find one we really love, one of them claims it as their own. My oldest daughter has her pumpkin chocolate chip cookies. My son has his carrot-applesauce muffins. So, my 7-year old daughter decided she wanted her own recipe too! This is what she wanted.
Peanut butter and chocolate have been a match made in Heaven forever! I prefer my kids don’t eat the popular brands of candy that combine these two because the back of the packages list ingredients I don’t want them to have! Giving kids alternatives that taste just as good, if not better than store-bought junk is the key to real food success! This recipe contains only 3 ingredients! Chocolate. Peanut Butter. Coconut Butter.
You can make your own peanut butter if you choose to. I buy organic peanut butter and I’m fine with that! I like this brand, but Trader Joe’s, Wegman’s and Whole Foods all carry organic peanut butter. Just make sure that all it has in it is peanuts, salt and maybe palm oil. If you don’t eat peanut butter, any nut butter can be used. If you can’t have any nuts at all, you can fill the chocolates with caramel (we experimented with these today for an upcoming post and they are really good!).
If you’re really bent on doing everything homemade then you can make your own chocolate chips too! This is a fantastic recipe! If you are purchasing them, I like this brand. Keep things as close to nature as possible!
Have fun with these! We let the peanut butter peek out because we thought it would be cool!
- 1 1/4 cups chocolate chips
- 2 TBS coconut butter or coconut oil
- 1/4 cup (approx) organic peanut butter (or other nut butter)
- Melt chocolate and coconut butter (or coconut oil) in a small saucepan over low heat, stirring frequently.
- Once melted, fill chocolate molds 1/3 of the way full.
- Place molds in freezer to harden.
- Once chocolate has hardened, fill molds another 1/3 with peanut butter (or other nut butter).
- Fill molds the rest of the way with remaining melted chocolate and allow to harden completely in freezer or on counter.
- Remove from molds and enjoy!
- Store extras (haha) in refrigerator.
So much fun! We made great memories and ate yummy candy without worrying about preservatives, artificial colors or GMOs! There’s nothing better than that!
