Aren’t these the cutest things?!?! Remember The Great Pumpkin, Charlie Brown? Linus was obsessed with seeing the “Great Pumpkin” to the point that even Sally (who is usually swooning over him) was annoyed with him. Good memories!!! Anyway, these sweet little pumpkin caramel chocolates remind of that movie for some reason:)
Making my own healthier candy that I can feel good about eating and giving to my children is really important to me. I know everything that’s in it and have full creative control over every aspect of production. Sounds pretty cool, doesn’t it? The perks of being the Mom!
The secret to these chocolates is the pumpkin spiced caramel. It’s super creamy and stays gooey within the hard chocolate exterior.
The chocolate I use for projects like this is this brand. I like them because they’re soy free. You can make your own chocolate if you wish. Here is a homemade chocolate chip recipe from The Coconut Mama you could try.
I make my own coconut butter but there’s a link for where to find it to purchase in the recipe below.
You can use these super-cute molds to make the chocolates into pumpkins.
- Melt chocolate chips and coconut butter/oil/or butter in a small saucepan.
- Fill molds 1/3 of the way full with chocolate.
- Allow to harden in refrigerator.
- Make a little divot in the center of chocolate with toothpick or knife and fill with caramel.
- Fill the rest of the way with remaining chocolate and put back in refrigerator until hardened.
