A few weeks ago I was cooking dinner and didn’t have a side dish. Dinner was going to be ready in 10 minutes! My husband, the resourceful man that he is, grabbed some potatoes, cubed them, seasoned them and threw them in a pan with butter. They turned out *amazing*! They are now a once-a-week side dish at our house.
Potatoes get a bad rap but they are really quite good for you.
They are super rich in vitamins and minerals, especially magnesium and most of us are deficient in that.
They’re great for your skin. B-complex vitamins, vitamin C, potassium, zinc, and the aforementioned magnesium are all key elements in healthy, glowing skin.
Potatoes can help reduce inflammation. They are full of fiber and easily digested and soothe the digestive track and intestines.
The all-important Omega-3 fatty acids are present in potatoes. Who knew potatoes were brain food!?! Amino acids are also prevalent which are really beneficial for overall health.
Some individuals have problems with nightshades like potatoes, tomatoes, and eggplant. Usually this stems from problems in the gut that may be eliminated through dietary changes and adding fermented foods. Sometimes a full blown GAPS Diet is needed.
Now for the recipe! As I mentioned, it’s my husband’s, so I can’t take credit but it’s really good…and easy!
- 4-6 organic red or white potatoes (or however many it takes to feed your family)
- 1/4-1/2 cup organic, pastured butter (or coconut oil, or another healthy fat)
- Sea salt, black pepper (freshly ground), garlic powder to taste
- Dash of smoked paprika (optional)
- Peel and cube potatoes.
- Melt butter (or other fat) in skillet and add potatoes, sea salt, garlic powder, black pepper and smoked paprika(optional).
- Sautee until potatoes are tender and golden brown. (note: photo was taken before potatoes were finished cooking.)
You can use other healthy fats like lard, ghee or tallow, but I really love the way butter tastes with this recipe.
