Harvest Salad

For years I have been bringing variations of this salad to parties, baby showers and play groups. This is the original concoction that all the variations stem from and it’s the first time it’s been published on my blog. This salad has literally saved me from going hungry some days when there was nothing for this mama to eat for lunch!

Lettuce is still very much in season in the fall. Apples are at their peak and cranberries are just starting. It’s the perfect time of year this quick and easy lunch or dinner dish. I like feta but goat cheese is wonderful in it as well. Pecans, almond or walnuts can be added for a nice crunch. I use dried, organic cranberries…raw wouldn’t taste very good.

Some other add-ins that are lovely for making this salad a meal are leftover chicken, salmon, tuna, or roast beef. In the summer I like to add berries like in this summer salad version

I like to use my favorite apple cider vinegar dressing for this. It’s also wonderful with a balsamic vinaigrette or homemade ranch (see below recipe for additional salad dressing recipes).

Harvest Salad

Ingredients

  • 1 full head of organic romaine lettuce or 3 romaine hearts
  • 1 organic apple, sliced with skins on (any variety)
  • 8 oz feta or goat cheese, crumbled or cut into cubes
  • 1/4 cup dried, organic cranberries
  • 1/4 cup almonds, pecans or walnuts (preferably soaked and dried)
  • Salad dressing of choice

Instructions

  1. Wash lettuce with a splash of white or raw apple cider vinegar.
  2. Spin dry using a salad spinner to remove all water.
  3. Place in a large bowl with remaining ingredients.
  4. Toss with dressing or add dressing separately.
  5. Serve and store leftovers in refrigerator.
