We are trucking along through January with our Grain-Free Weekly Meal Plans!

I’m a little cold these days as we are set deeply into winter. It’s been so gray outside and I find myself longing for the warmth of the sun more and more. I’m thankful for a fireplace which drives away some of the winter chill and adds light to my home on dark nights.

Spring will be here before we know it. That’s the beauty of the seasons…spring always comes! I do enjoy the warming foods of winter, but I do love to have salads and other foods mixed in the remind me of what’s to come. 

I’ve been talking a lot with people lately about rotating foods and how important it is to allow food to be digested and eliminated before adding the same food to the body again. Three to four days seems to be a good amount of time to fully digest a food before reintroducing again. This especially applies to foods that generally take longer to digest like nuts, seeds, beef, etc. I’d be happy to elaborate more on this subject if there is interest. Let me know in comments. 

With that said, I have quite a bit of chicken to use up this week so I have more than one chicken recipe in this week’s menu.

Dinner – Slow Cooker Chicken Verde with Peppers


Breakfast – Overnight Paleo Pear “Oatmeal”

Lunch – Winter Jewel Guacamole

Dinner – Menudo Filipino Pork Stew


Breakfast – Coconut Flour Pancakes

Lunch – Taco Lettuce Wraps

Dinner – Wild Thing Texas Chili
