It’s been a really crazy week with a lot of strange happenings. I am really starting to believe in Mercury Retrograde with all the computer glitches and people glitches!
The best thing that happened this week was that I was cleared of ALL food sensitivities exactly one year to the day since I was diagnosed with the first of them. It was great news! Now, just because I can eat anything I want does NOT mean I will. I am enjoying my recovery and have worked very hard to heal from adrenal fatigue, leaky gut, and whatever autoimmune disease I was on the road to getting. I’m planning on keeping my health. Nutrition works!
There’s a frost warning here in the Northeast tonight which means it’s time to say goodbye to the last of the summer veggies. I was just thinking how beautiful all my flat leaf parsley looked outside my back door today too!
I spent my Sunday in my kitchen like I usually do prepping food for the week, roasting pumpkins to make pumpkin soup and puree. Because I homeschool, blog, own an herbal business, and work outside the home part-time, I also did a few other make-ahead meals so that we would have an easy menu. My kids were thrilled that I made some delicious pumpkin bars for dessert! A rare treat!
You’ll see a lot more “bread” type foods this week, especially for breakfast. I may sub some of them out for eggs and bacon, or dinner for breakfast here at home. There are seasonal soups, lots of pumpkin things, and slow cooker meals.
Breakfast – Banana Peanut Butter Smoothie (can sub any nut butter)
Dinner – Slow Cooker Moroccan Chicken
Breakfast – Pumpkin Spice French Toast
Dinner – Autumn Chicken with Butternut Squash and Barley (to make this grain-free I would use caulirice instead of barley)
Breakfast – AIP “Raisin Bran”
Lunch – Paleo Meatballs (great over salad or in a grain-free sandwich wrap)
Dinner – Delicata Squash Crostata
Breakfast – Spiced Pumpkin Bread
Dinner – Asian Orange Chicken
Breakfast – Triple Coconut Muffins
Lunch – Bacon Crusted Chicken Strips
Dinner – Paleo Pumpkin Soup
Breakfast – Souffle Spice Pancakes
Lunch – Cilantro Chicken Salad
Dinner – Paleo White Chicken Chili
